Easy Shortbread Biscuits

A super-easy shortbread biscuits recipe anyone can do without much equipment or kitchen gadgets. All you’ll need is the oven, a few utensils, and 4 ingredients that are likely stored in your kitchen cupboard. Surprise your partner or family with house filled with beautifully sweet aroma and freshly baked biscuits on the kitchen table.

Ingredients:

  • 125g unsalted butter

  • 175g plain flour

  • 50g caster sugar

  • 30g sugar crystals or demerara sugar

  • vanilla extract or paste

  • A small pinch of salt

Directions:

  1. Start by weighing in all the ingredients.

  1. Put a soften butter in a bowl and cream with spatula until pale in colour.

  2. Add sugar, vanilla and salt. Continue to cream until the sugar is incorporated.

  3. Add all the flour to the bowl and mix it in until mixture gets appearance of unbaked crumble.

  4. Use your hand to further process dough until is smooth and comes together as a ball. Take care not to overwork the dough.

  5. If you feel the dough is soft, refrigerate for a while.

  6. Roll the ball of dough into a cylinder shape approximately 5cm (2in) in diameter on a sheet of baking paper.

  7. Spread out the sugar crystals or Demerara sugar evenly on baking parchment, then roll each cylinder in the sugar.

  8. Preheat the oven to 180c.

  9. Using a sharp knife cut cylinder slices 1.5-2cm (1/2-3/4in) thick. Put slices evenly spread on the tray lined with the baking parchment leaving 3-5cm (1-2in) between them.

  10. Bake in the middle of the oven for 18 minutes or until they are golden brown.

  11. Transfer to wire rack to cool down.

Notes:

These shortbread biscuits are made without eggs. This makes the texture very crunchy and crumbly. They are best to enjoy fresh with tea or coffee but will last for up to a week in airtight container. You can make these using the cheapest ingredients from supermarket and they will taste lovely but if you spend bit more and buy good quality butter, flour and use real vanilla they will be out of this world!
